We require our growers and suppliers to comply with all the American Veal Association guidelines and procedures as set forth in their Veal Quality Assurance Program and their Guide for the Care and Production of Milk-Fed Veal Calves. Additional detailed information is available for your review.
2. Dutch Valley Veal FARMS. A Consistent Supply of Quality Special-Fed Veal
As an industry-integrated operation, well over 50% of the veal calves we process are raised under our direct management. Thus we control the supply and quality closely. Integration allows us greater flexibility in balancing supply with demand. You wouldn’t just be doing business with a distributor or packer, you would be doing business with a veal grower also.
3. Live Animal Pre-Wash
Upon arrival into our livestock holding are, all calves are thoroughly washed to remove dirt, manure and loose hair. We believe that this is an important first step to help in minimizing the potential for overall microbial and pathogenic contamination.
4. Steam Vac Technology
We care for the safety of our customers enough to voluntarily use the Kentmaster Steam Vac system in our slaughter operation, a proven system to reduce microbial and pathogenic contamination. Does your current supplier utilize this technology?
5. Automatic High-Pressure Chad Carcass Wash
We automatically wash every carcass in the Chad Automatic High-Pressure Wash Cabinet at 325 PSI. This technology has also been proven to reduce microbial and pathogenic contamination which means a safer, higher quality product.
6. How Well Are Our Intervention Strategies Working ? – . .The Results Are In! And Impressive!
The USDA requires all slaughter plants to regularly and randomly test for generic E. Coli. After more than five years of testing, our results have been well under the USDA’s upper limit of 100 colonies per square centimeter. In fact, our recent two-year average is <1 colony per square centimeter.
7. Overall Plant Sanitation
We’re in the meat business, not in the sanitation business. That’s why we utilize an outside contractual service to sanitize the entire plant. Each piece of equipment is meticulously foamed, hand washed, rinsed, and sanitized each night after production. Many visitors often say that our plant is “so clean that you could eat off the floor!".
8. Computerized Temperature Recorders Throughout the Plant
Our plant is COLD!... and to ensure that our products meet the quality standards for temperature, a computerized temperature monitoring system that records the temperatures in twelve zones throughout the plant 24 hours a day / 7 days a week. Should even the slightest variation occur within any of the zones, an alarm triggers immediate corrective action.

All of our products are bar coded with lot numbers so we can track each box individually. All weights are taken by a precision calibrated computerized scale to ensure accuracy. Computer generated tally sheets can be provided with deliveries to save your receiving department time. With bar coding all our products also have accurate tare weights.

We can provide your stores with recipe stickers, shelf talkers, nutritional labels, etc. They can be included in each box or sent to individual store’s meat managers directly.

Product undergoes minimal shrink because our carcasses are rapidly chilled to under 40 degrees and processed under one roof and under strict sanitary conditions. Generally, products are packaged within 24 hours of slaughter, minimizing the opportunity for bacterial growth, which in turn means less spoilage and longer case life for you.
