The Program:
- Start with the very finest premium milk-fed veal (and ONLY veal -- no species cross-over), we specially select product exclusively for Case-Ready processing.
- Product for the Case-Ready package is taken from smaller carcasses, ideally
weighing 190 - 210 pounds.
- Product is NEVER cut from previously frozen or tempered meat.
- We go to extraordinary lengths to insure that product integrity is maintained from
start to finish, including...
- Product is rapidly chilled to under 40º internal temperature within 24 hours of slaughter
- Close tolerance temperature monitoring is observed at every stage of processing
