VEAL BURGERS WITH
SAUTEED PEPPERS
Serves 6. Total Prep/Cooking Time: 25 minutes
1½ lbs. ground veal1 egg, slightly beaten¼ c. finely chopped onion½ t. salt12 sl. bread, toasted1½ t. olive oil1½ c. red, yellow and/or green bell peppers, cut into thin strips¼ t. salt
- In large bowl, combine ground veal, egg, onion and peppers, mixing lightly but thoroughly (mixture will be very moist). Shape veal mixture into six ½-inch thick patties. Place on rack in broiler pan; place pan in oven so that surface of meat is 3 - 4" from heat source. Broil 1212-14 minutes, or until centers are no longer pink, turning once. Remove, and season with ½ t. salt.
- In non-stick skillet, heat oil over medium-high heat until hot; add bell peppers. Cook and stir 5 minutes or until tender. Lightly season with ¼ t. salt.
- Place cooked patties on slices of toasted bread. Top with sauteed peppers. Complete sandwiches with remaining pieces of toast.
