SALTIMBOCCA ALLA ROMANA (VEAL WITH PROSCIUTTO)
Serves 4. Total Prep/Cooking Time: 35 Minutes
8 veal cutlets, pounded thin 2 tablespoons olive oil 2 tablespoons unsalted butter 1/8 teaspoon ground sage Freshly ground black pepper to taste Salt to taste (optional) 8 thin slices prosciutto \1 lemon, thinly sliced, for garnish
- Preheat the broiler. In a large skillet, sauté the veal lightly in the oil and butter. Place on a baking sheet and dust with the sage, pepper and salt. Top each slice of veal with a slice of prosciutto.
- Place under the broiler, farthest from the direct heat, until the prosciutto is limp.
- Garnish with lemon slices and serve.
